Yogic Banana/Blueberry/Apple/Walnut Bread

I call this Yogic Bread because I started creating it from a basic banana bread recipe when I was auditing a 200 hour yoga teacher training class in 2017. Sometimes, when I have trouble sleeping, I start repeating in my mind all the ingredients and steps in making the bread. So far, I’ve never finished a night time loaf. So, I recommend the bread not only for delicious nourishment, but as a sleep aid!
Ingredients
3/4 cup whole wheat flour
3/4 cup all-purpose flour
½ cup sugar (optional amount)
1 tsp baking soda
½ tsp baking powder
½ tsp cinnamon
½ tsp nutmeg
½ tsp salt
½ cup vegetable oil (I use canola oil)
2 eggs beaten
2 tsp vanilla extract
2 ripe bananas mashed
1 cup blueberries (fresh or frozen)
1 small unpeeled apple, diced (three bananas may be used instead of two bananas and an apple)
1 cup English walnuts toasted and diced (untoasted is okay, I think toasting brings out the flavor)
Instructions
Preheat oven to 350 degrees F
Grease a nine-inch loaf pan with butter and dust with whole wheat flour
Combine and sift all dry ingredients
Dice walnuts fine and add to sifted dry ingredients
Add blueberries, walnuts, and diced apple to dry ingredients and mix
Mash bananas
Add oil, vanilla extract, and beaten eggs to mashed bananas, mix well, and fold this mixture into the dry ingredients. Pour final mixture into loaf pan and bake in 350-degree oven for one hour.
